BILTONG, BUTTERNUT & CARAMELISED ONION QUICHE

🧂 Ingeredients:

  • 300g Steamed butternut (cubed)
  • 100g Biltong
  • 80g Feta cheese
  • 4 eggs
  • 2 egg whites
  • 100ml milk of choice
  • Spices of choice: salt, pepper, garlic flakes/salt, garlic/herb spice etc.
  • Cheese for topping (Optional)

Caramelised Onion (optional):

  • 5ml Avocado oil
  • 1 medium onion
  • Balsamic Vinegar
  • 2tsp Honey

 

🧑 Directions:

  1. Preheat oven to 180C
  2. Pour the oil into a pan and let it heat.
  3. Cut the onion into rings/slices and place it in a hot pan, stirring for about 3 minutes.
  4. Add a splash of balsamic vinegar and honey.
  5. Lower the heat and fry until brown and sticky, then take it off the heat.
  6. Cut the feta and butternut (if preferred) into smaller blocks.
  7. Beat all the eggs and milk together and flavour with spices of choice.
  8. In an ovenproof dish, layer the butternut, feta, biltong, and onions.
  9. Pour over the egg mixture.
  10. Top with some cheese.
  11. Bake for about 30-35 minutes (this will depend on the depth of your dish).
  12. Serve with a side salad or eat as is
