BILTONG, BUTTERNUT & CARAMELISED ONION QUICHE

🧂 Ingeredients:
- 300g Steamed butternut (cubed)
- 100g Biltong
- 80g Feta cheese
- 4 eggs
- 2 egg whites
- 100ml milk of choice
- Spices of choice: salt, pepper, garlic flakes/salt, garlic/herb spice etc.
- Cheese for topping (Optional)
Caramelised Onion (optional):
- 5ml Avocado oil
- 1 medium onion
- Balsamic Vinegar
- 2tsp Honey
🧑 Directions:
- Preheat oven to 180C
- Pour the oil into a pan and let it heat.
- Cut the onion into rings/slices and place it in a hot pan, stirring for about 3 minutes.
- Add a splash of balsamic vinegar and honey.
- Lower the heat and fry until brown and sticky, then take it off the heat.
- Cut the feta and butternut (if preferred) into smaller blocks.
- Beat all the eggs and milk together and flavour with spices of choice.
- In an ovenproof dish, layer the butternut, feta, biltong, and onions.
- Pour over the egg mixture.
- Top with some cheese.
- Bake for about 30-35 minutes (this will depend on the depth of your dish).
- Serve with a side salad or eat as is
